I am going to go ahead and apologize for the sad lack of pictures in this post. However, this improvised dinner turned out so well I thought I’d share anyway. I decided that Wheat and I needed to be eating more fish, so I purchased a couple salmon filets at Publix one day last week without consulting any recipes beforehand. I figured I’d just wing it, and I did. What resulted was a really tasty and quick dinner!
Orange Glazed Salmon
– 2 to 3 tablespoons of orange marmalade
– 2 tablespoons (or to taste) balsamic vinegar
– 1 teaspoon (or to taste) kosher salt
-2 salmon filets
Mix and mash the orange marmalade, balsamic vinegar, and salt together. Place fish skin side down on a foil-lined baking sheet, and cover completely with orange-vinegar mix. Bake at 400 for 14 minutes, then use a spatula to remove fish from pan, leaving skin on the foil.
I served it with roasted asparagus that I put in the oven with the fish. The asparagus was lightly coated with olive oil and some salt and pepper (not pictured below) Couldn’t have been easier!
Not much to it, but it was a fresh and tasty weeknight dinner that I’ll definitely be doing again soon! Maybe next time I’ll get cooking before dark and be able to take some decent pictures. Enjoy!
