Happy Friday! Wheat and I have been on a mojito kick lately. Coincidentally, mojitos are one of my father-in-law’s favorite cocktails, as well. So for his birthday last weekend, we set him up an all you can drink mojito bar on Saturday night.
Here’s what you need for this deliciously refreshing toddy:
– fresh mint
– club soda
– white rum (the best you can buy)
– fresh limes, sliced
– simple syrup (recipe to follow)
To start off, muddle a few mint leaves and a couple slices of limes in the bottom of a glass. Once you get it good and juicy, pour rum in the glass (as much as you want, but I like a 2:1 ratio of club soda to rum). Put the simple syrup in, approximately 1 tablespoon, and mix that up. Top with ice, then fill to the top with club soda. Or ya know what? Take these ingredients and put them together however you’d like. I’m really not much of a booze snob and generally just stick to the vino where I feel safe, so I’m probably not the best one to be throwing out cocktail recipes. Just make it taste good.
Simple Syrup Recipe
– 2 cups sugar
– 1 cup water
– 1 tablespoon vodka
Bring the water to a rolling boil in a medium saucepan. add the sugar and stir constantly until it is dissolved completely. Once it’s dissolved and the mixture is clear, remove from heat and add vodka. Keep stirring for a moment, then leave it to completely cool. Once cool, bottle and store in the refrigerator. Will keep for weeks.
Note: The ratio for simple syrup is 2:1 – two parts sugar to one part water. I made a big batch for sharing and keeping, so I used two cups of sugar and one cup of water.
Another Note: You can leave out the vodka, but I read that it helps the syrup keep longer, so I added it. You couldn’t taste it, and I’m sure the alcohol at least partially cooked off.
Confession: I’m a bottle (and jar) hoarder. But they come in handy for projects such as this. I just so happened to have a couple pretty bottles to put the simple syrup in, and I used some Scotch “Expressions” labeling tape and a sharpie to label them. I need to jump on the washi tape bandwagon, but alas, this is all they sold at our lovely local Wal-Mart.
